Goats have always been part of the rhythm of life here at Dark Water Ranch. Over the years, we’ve learned that both dairy goats and meat goats play different but equally important roles in keeping our homestead productive, resilient, and connected to the community. Each group brings something valuable to the table — from milk and cheese to pasture management and high‑quality meat — and together they help us build a farm that’s balanced, sustainable, and true to who we are.

How Dairy Goats Fit Into Our Farm

Our dairy goats are hands‑on animals. They require daily milking, close attention, and a relationship built on routine. But they give back in ways that ripple across the whole farm.

  • They provide fresh milk for our home kitchen.

  • They help raise healthy kids with strong starts.

  • They contribute to soil health by grazing differently than our meat goats.

  • And now — thanks to a major change in Oklahoma law — they’re opening a new door for us.

A Big Change for Oklahoma Dairy Goat Farms

For years, Oklahoma law made it nearly impossible for small farms like ours to sell goat cheese. Even if you milked your own goats, you couldn’t legally sell cheese unless the milk came from a state‑registered dairy facility — something far beyond the scale of most homesteads.

That changed recently.

Oklahoma now allows farms to produce and sell goat cheese directly from the farm, as long as it’s made from milk produced right here on-site. For us, that’s huge. We’ve been making goat cheese for our own table for years — experimenting, refining, and learning — but we couldn’t share it with the community.

Now we can.

We’re planning to offer our first batches next spring, right here at Dark Water Ranch. It’s a natural extension of what we already do, and we’re excited to bring something new and truly local to the farmstand.

Our Style of Cheese: Chevre With Flavors

We make a simple, rustic farmers cheese — a crumbly, fresh cheese that’s incredibly versatile. It’s the kind of cheese that fits a homestead: straightforward, wholesome, and adaptable.

We like to play with flavors, and some of our favorites include:

  • Garlic & Herb

  • Cracked Pepper

  • Smoked Paprika

  • Ranch Blend

  • Honey & Cinnamon

  • Jalapeño

Farmers cheese takes on seasoning beautifully, which means each batch can highlight what’s in season or what’s growing right here on the ranch.

Goat cheese has a reputation for being easier on the stomach than cow’s milk cheeses, and many people who struggle with dairy find goat products more comfortable to digest.
